Capsicum Egg Pepper Fry
Here is a delicious capsicum and egg curry with a bite of pepper to add a zing to any meal. Easy and quick to make, using very few ingredients, try this curry with rice, pooris or rotis.
The original super food, eggs are loaded with goodness. They contain protein, vitamins and minerals. The egg white contains most of the protein and the yolk contains antioxidants, healthy fats , vitamins and minerals.
Capsicum or Green Bell Peppers aid eye health and help reduce certain diseases. They contain anti oxidants and vitamins.
Ingredients:
6 Eggs
1 Large Capsicum ( Diced into small pieces)
1 Onion diced into small pieces
1/2 Tsp Pepper powder ( adjust according to taste)
1 Tsp Chilli Powder
1/2 Tsp Ginger Garlic Paste
1/4 Tsp Turmeric powder
Salt to Taste
2 Tbsp Oil
Let's get started:
Boil the eggs for about 8 minutes ( Hard boil). When boiled, let them cool and remove the shell.
Prick the boiled eggs all over with a fork. This allows the spices to permeate the eggs.
Rub salt and turmeric powder on the eggs.
In a pan, heat the oil. First fry the eggs, turning them, till a light crust forms all round.
Remove to a bowl.
In the same pan and oil, add the diced onions. Saute for a minute and then, cook covered for a few minutes till the onions are translucent.
Add the diced capsicum and stir well. Saute for about 3 to 4 minutes on medium flame. The capsicum should have a slight bite to it and not become too soft.
Add the chilli powder, ginger garlic paste and pepper powder and mix well. Add half a cup of water. Cook covered for a few minutes till the water evaporates.
Add the eggs and mix well. Saute for a few minutes till the eggs are well coated with the masala. If you want the curry to be spicier, you may add more pepper powder.
Serve with salad.
