Finger Licking Prawn
Curry
One of the most delicious sea food dishes from Andhra is Prawn curry. It is a dish that can make up a full meal with just some rice and Sambhar or Rasam. You could also accompany it with a more elaborate festive meal consisting of Pulao, Jeera Rice or Biryani.
Rich in antioxidants, and minerals such as zinc, copper, magnesium and phosphorous, prawns are effective in maintaining healthy cells and developing a healthy immune system. They also assist in building strong bones. A perfect blend of flavour and health, be sure to include this finger licking good Prawn curry in your menu.
Ingredients:
½ Kg Prawns ( shelled, deveined and washed)
1 Cup diced Onions
¾ Cup diced Tomato
1 Tsp Chilli Powder
2 Tsp Coriander Powder
1 Tsp Garam Masala Powder
Salt to taste
1 Tsp Turmeric Powder
3 Tbsps Oil ( I used refined Sunflower Oil)
A few Coriander leaves
Let’s get started:

Heat 1 tbsp Oil in a pan. Add the washed prawns
with ½ tsp Turmeric and ½ tsp Salt. Fry till all the released water evaporates.
This will take about 3 to 4 minutes. Don’t overcook the prawns as they become
rubbery. Remove prawns and keep aside.

In the same pan, heat 2 tbsps Oil. When hot, add
the onions and fry on medium flame, covered, till the onions turn translucent. Add ½ tsp
turmeric powder and salt to taste. Mix well. When the onions are light golden
brown, add the diced tomatoes and mix well. Cook covered on low heat till the
tomatoes turn mushy.

Add the chilli powder, coriander powder and
garam masala powder and mix well. Cook on low heat till the masala is well
mixed with the onion and tomato mush.
4.
Add the fried prawns and mix well. Add ½ cup of
water and mix well. Cook covered on medium flame till all the water evaporates.
5.
Remove the cover and cook on low flame till the
curry turns a nice dark reddish brown colour and the oil starts separating from
the sides of the pan.
6.
Garnish with coriander leaves and sever hot with
rice, roti or dosa.
Finger licking good prawn curry ready to be
devoured.
