Easy Pressure Cooker Prawn Pulao



The perfect one pot comfort food for the weekend is this Prawn Pulao. The slight crunch of the prawns, the mellowness of the coconut milk, the special flavour of the Basmati rice combined with aromatic spices - all leave your taste buds fully satisfied. This makes a great main course for any party or family get together.

Though Prawns are high in cholesterol, they are low in saturated fat and contain healthy Omega -3 fatty acids. 

Ingredients:

750 Gms Prawns – shelled , deveined and cleaned

1 ½ cups Basmati Rice – washed and pre-soaked for ½ hour

1 cup finely diced Onions

2 Tomatoes – finely chopped

6 Green Chillies – slit lengthwise

½ cup Mint leaves – washed

½ cup Coriander leaves – washed and chopped

3 Tbsps Ginger Garlic paste

3 Bay leaves

4 Cardamom pods

4 Cloves

1” piece Cinnamon

1 Tsp Shah Jeera

Salt to taste

Turmeric – one pinch

1 Tsp Chilli Powder

2 Tsps Coriander powder

1 Tsp Garam Masala Powder

1 cup thick Coconut milk ( or 3 tbsps Coconut milk powder mixed with 1 cup water)

2 cups water

3 Tbsps refined Oil

2 Tsps Oil for prawns

2 Tbsps Ghee


Method:

1. Wash and soak rice ½ hour before start of cooking.

2. Wash the prawns well. Fry in 2 tsps oil with salt and turmeric. Fry till all the released water evaporates. Keep aside.

3. Get the coconut milk ready.

4. In a pressure pan, heat the oil. Add the cardamom, cloves, cinnamon, green chillies, shah jeera and bay leaves. Fry for a minute.

5. Add the mint leaves and fry till wilted well.

6. Add the onions and fry till slightly translucent. Add the tomatoes and ginger garlic paste. Fry till the raw smell disappears.

7. Add the chilli powder, coriander powder and garam masala powder. Fry well for a minute on medium flame. Don’t let it burn.

8. Add the Prawns and fry for three minutes on low flame.

9. Add the coriander leaves. Mix well. Add the coconut milk and water. ( Measure of water to rice should be 2:1).

10. When the water bubbles, add the rice. Mix well and check for salt. Add if necessary. Remember there is salt in the prawns too.

11. Add the ghee. Close the pan lid and pressure cook for two whistles and immediately turn off the flame.

12. Open the lid only after the pressure fully subsides.

13.  Mix well and serve hot with Raita. Boiled eggs also go well with this.

Delicious Prawn Pulao is ready to serve.

 Hyacinth Bean Curry ( Pithiki Pappu/Avarekai/ Mochakai) Anyone living in Bangalore will be very familiar with the avarekai festival. When in season, this peeled Hyacinth bean is used in almost every dish possible, be it savoury or sweet.  Kamsu Pitta Vadiyalu ( Quail Bird Cutlets) A recipe from my husband's village, that was considered a specialty is this Kamsu Pitta Vadiyalu.
