Chicken Kurma


One of the most soul satisfying dishes I have ever eaten, is the Chicken Kurma. It is a rich creamy dish with a hint of tanginess that goes well with rice, dosa or roti. It calls for simple ingredients that are usually available at home and can be made in half an hour if prep is done before hand.

Chicken is a protein rich food that boosts heart and bone health and aids metabolism.It is said to promote eye health and prevent bone loss. And above all, it tastes delicious any way you cook it.


Ingredients:


½ Kg Broiler Chicken ( Without skin, with bones and curry cut)

For marinade:

1 tbsp Ginger garlic paste

½ tsp Turmeric

1 ½ tsp Chilli powder

1 ½ Tsp Dhania Powder

1 Tsp Garam Masala

1 cup thick Curd

1 Tsp Salt

For the Onion paste:

2 large Onions

1 large Tomato

20 kernels of Cashewnut

2 Tbsps Melon seeds

½ Tsp Turmeric

Others:

3 + 1 Tbsps Oil for frying

Salt to taste

A marble sized ball Tamarind – soaked and pulp removed

Garnish:

2 Green Chillies – slit

1 sprig Curry leaves

4 cloves of Garlic - peeled


Let's get started:

1. Wash chicken and drain. Add all the ingredients for marinade and mix well. Keep aside for 10 minutes.

2. In the meantime, blend all the ingredients for onion paste in a mixer till a smooth paste is formed.

3. Heat oil in a pressure pan. When the oil is hot, add the onion paste and fry on medium heat till the raw smell disappears ( about 5 minutes). 

4. Add the marinated chicken and mix well on high heat till the chicken pieces are seared well and change colour. Cook on medium flame for 5 minutes. 

5. Then add 1 1/2 cups of water, mix well and pressure cook for two whistles.

6. When the pressure subsides, open lid and cook on high heat till gravy thickens. 

7. Add the tamarind pulp and check for salt. Keep stirring till the oil starts to separate from the sides on the pan. Remove to a dish.

8. Heat 1 Tbsp oil in a tadka pan. When the oil is hot, turn flame to low and add the green chillies, curry leaves and garlic. Switch off stove. Pour the tadka over the chicken curry and stir.

Relish with rice , roti or dosa.

Kamsu Pitta Fry ( Quail Bird Fry) One of the most unique dishes of Andhra is the Kamsu Pitta Fry. Kamsu Pitta is known in English as Quail Bird. These birds can be cooked whole or cut into bite sized pieces ( as I have done in this recipe). Since the birds are very small and tender, there is very little meat and one has to chew them with the bones. Kamsu Pitta Vadiyalu ( Quail Bird Cutlets)

 Kamsu Pitta Vadiyalu ( Quail Bird Cutlets) A recipe from my husband's village, that was considered a specialty is this Kamsu Pitta Vadiyalu. It is unique because of the fact that by nature the Kamsu Pitta or quail bird is very small and as such has very little meat.
